This excellent cocktail celebrates the September gin of the month.
Don’t forget to garnish with crumbled frozen raspberries.
15ml Fresh Lemon Juice
1 Egg White
50ml Simple Syrup
5 Fresh Raspberries
Muddle the raspberries and simple syrup in a shaker. Add gin, lemon juice, egg white and shake to emulsify. Add ice and shake again. Double strain into a champagne glass.
